Well I had a long blog post typed out but my phone decided to completely delete it so I will inform you of today's happenings tomorrow because I won't have any tomorrow since I am just working a double! I did want to stop in to say Happy Birthday to one of my best friends Rose!! She'll probably hate me for putting this up but I just had to share her cuteness with the world! Love you Rose!!!

To any of you other triathletes you know what a brick workout is. To those of you who are not I will explain. A brick workout is when you do two workouts back-to-back. For example whenever I got for a bike ride then immediately run after. From what I have heard and read these are some of the best workouts to incorporate in your training.
The easiest and most common is going from biking to running and vice versa. Today I did a kind of "extended" brick workout. I went back to where I will bike my race and did the full two laps for a total of 16 miles. The hill conquered me today unfortunately. My legs were a little heavy from my late incline workout last night and I could have used some more food in my system before taking on the heat and the hill. I will make it a point to get back there a couple more times before my race. I then went home and got changed and headed to the pool for the second half of my brick workout. My legs felt like dead weight today but I managed to finish my whole workout which I was happy about. This is what I did: 1 x 300 1 x 200 1 x 250 1 x 200 1 x 250 6 x 50 1 x 200 The rest of the night I spent with my good friend Tyler catching up and watching Brian Regan! If you haven't heard this comedian before you HAVE to YouTube it! Happy YouTubing :) It really started to hit me yesterday that my race is ONE month away! It's not exciting and nerve wrecking at the same time. Today was schedule was a little off. My mom and I went grocery shopping after I taught a class at 10 not leaving me much time to workout and get a good lunch in before work. For lunch today I made on of my mom's favorite sandwiches, that is becoming one of mine as well! While prepping my sandwich I snacked on some Pretzel chips with hummus. Yumm! For this sandwich you first mix about a tablespoon of cream cheese and a tablespoon of Gorgonzola cheese. Then you spread this mixture on bread and top it with some cut red onions, cucumbers and tomatoes. And then you grill it up and get a little something like this... The perfect bite! After my delicious lunch it was off to work for the night. Once I got off it took a lot of my will power to get my to the gym for a workout, but I knew I needed to get there. When I got there I did a 45 minute incline workout. I had this on my phone on my pictures...I think it was from Peanut Butter Fingers but I am not 100% sure. It's encouraging seeing others at the gym so late too! I haven't fully decided yet how I feel about working out so late. It's kind of nice to not have a lot of peope around, but it definitely requires more effort to make it there. The morning still remains as my favorite time to workout!
When is your favorite time of day to workout?! Today I went to the site of my sprint tri to map out the bike ride and run. The bike ride is two 8 mile laps. I only biked one lap though today. It wasn't too bad though. I am a bit nervous about how the bike and run start....this is the hill that you have to go UP to start the bike. Need I remind you, I will be coming straight from swimming and I could barely make it up with fresh legs! This is the hill from the bottom... This would be so much better to go DOWN!! I'll be praying the whole way up! Besides that hill though the biking portion did have a couple other hills but overall it should not be too bad. The running is a lot of hills too however so I will definitely need to up my hills when I go running. My mom is a little worried about the hills too since she is still getting back into running. The weather was perfect today for my bike and run. The sun was out but it wasn't too hot, and there was a slight breeze. It was good. Once I came home though I needed some lunch before work. I definitely needed some protein so I cooked up some veggies, threw some spinach on top and cooked an egg to put on top! One of my new favorites! After work I went over to Carly's house for a surprise ice cream birthday party for her sister who is turning 18 on Friday! It was a success and Katey was definitely surprised! I was however eaten alive...but I still had fun! I suppose that's what I get for indulging in ice cream like that two nights in a row (last night was frozen yogurt though...). I really need to lay off the sweets until race day. Game on!! Help me to stay focused friends and be successful on my quest to forget about sweets! Oh boy it will be tough but I've got to do it!!
I know I haven't posted it TWO days, but I've been a little busy! Erica and I headed off to the beach for the day! First we made some yummy smoothies filled with strawberries, blueberries, greek yogurt, ice and some ice cream too! Then it was off to the beach! I was so excited because I just LOVE the beach. Unfortunately we got a little behind due to some track. This is what I wanted to do while we were waiting... Erica was the driver but she still managed to sneak in a nap! Haha But finally we made it! We got a prime parking spot and parked in on the beach for a solid seven hours. I was in heaven! The water was a little cold for my liking but I still couldn't resist it! Erica mom spoiled us rotten and packed a bunch of food for us to eat! We had hummus, fruit, chips and salsa. Perfect beach food...the seagull that stole my pita would agree too! Before we went home we stopped in town Stone Harbor at the Fudge Kitchen to pick up some fudge for our families and for some Coldstone. I got the mint chocolate chip mixed ice cream. It really hit the spot after a long day in the sun! Yesterday I left Erica's :( it was a great trip and I can't wait to be roommates with her this year! When I got home I went on a run with my mom. Then I planned on riding my bike to my dad's baseball game since its only seven miles away. Well thank goodness I left before my mom and brother because they happened to pass me just as I got a flat tire!! I was not too happy, especially because I didn't finish my ride. Once we got to my dads game I did some inch worms and ran some hills. The rest of the night was pretty much spent studying with Nicole for our stats test we had this morning. My mom did make one of the best meals I've had in a while...lobster risotto!! I had if for lunch again today too! Today I had my test and I just got back from swimming. Today's workout was like this :
1 x 300 10 x 50 1 x 100 1 x 50 3 x 100 4 x 25 1 x 200 The rest of the night? A fruit salad of cantaloupe, pineapple and blueberries on a bed of spring greens and the Bachelorette! Go Sean!! Today has been an absolutely wonderful day!! I first started off my day with a great run. I woke up a little earlier than usual so I could start my travels. The weather was not too hot yet and it wasn't humid. Perfect! I finally got everything together and headed off to New Jersey...not without stopping at Starbucks first! I got a white chocolate mocha with organic soymilk! The perfect treat for a lonely traveler. After the new John Mayer CD played through, and some Glee tracks, I finally made it through my first trip through Philly and made it to New Jersey! Driving through Philly was a little nerve wrecking but I made it! I was so excited to see Erica! First stop on hometown tour number two? The Phily Diner, a staple in her hometown. I got a crab cake sandwich. It was delicious! Erica recommended it, since the menu had so many options, but finding a vegetarian meal was a little hard. The sandwich was a big win though! And the clam chowder was one of the best I have had. Erica had chicken noodle soup...she loved it ;) She also had a pretty good lucking tortilla chipotle chicken salad. After lunch we went shopping, for awhile. We had fun and found some good bargains. I'm always down for a nice day of shopping! We came home for a wonderful dinner Erica's mom made us. She made an savory vegetarian pasta dish. It was filled with feta cheese, spinach, pinto beans, sun dried tomatoes and olives. I was so flattered that she went out of her way to make a vegetarian dish! We went to their local "water ice" shop, The Water Icr Factory, for dessert. It may have been the best Italian ice I've ever had. I got a strawberry lemonade gelati or "whif". Now we are snuggling in for the night watching Something Borrowed and getting ready for a hot day at the beach!! I'm so excited to be able to go for the day! Stay cool everyone. It's going to be a hot one tomorrow!
Yesterday was the fourth of July! I hope everyone enjoyed their day. I know I did! I started off the morning picking raspberries at the local farm with my dad. It was a hot one, but the berries were worth it! Look how pretty they are! This was our loot from the trip. Some raspberries made it onto the other dessert I made for the day. A brownie dessert pizza. It was a huge hit along with the Oreos! I tried to get a little creative with the decorating. Creativity is not usually my forte but I enjoyed testing out my abilities on this dessert. Yesterday afternoon I went on my first bike ride with my tri-bike. And I would dub it successful with only one cut and one almost fall off the bike in town. I have to say I am surprised how different it felt. I'm very thankful I have time to train with the bike. The hunching over is a big adjustment along with how to stop without falling off and start in a timely manner. But I'll keep practicing!! After my bike ride I went on a different kind of bike ride with my dad...a motorcycle bike ride. My dad has a Harley and one of my favorite things to do, especially when it's nice out, is to go for a ride on the Harley with my dad. We went to go visit my Nana and Pop, his parents, for a little while. On the way home we had a little mishap. We ran out of gas right outside of our neighbor luckily. My brother came and saved us with some gas to get us home. Quickly after I got home I threw together some quinoa to add with my fish taco mix to make a little quinoa fish taco bowl. It was yummy!! Adding quinoa with leftovers to make a little bowl of yumminess is a great idea! The rest of my night consisted of hanging out with the girls. If you haven't figured out by now the girls are Carly, Nicole and Rose, and usually Ellen but she's in France! We went to Rose's house while her dad grilled us up some veggie burgers and corn on the cob. It really hit the spot! You just have to grill on the fourth of July and just cause you are a vegetarian doesn't you can't cookout. I've even got my friends into Boca burgers! We later went to watch the Harrisburg fireworks and finished the night with a couple episodes of friends. You can't just watch one! Today I got up early to go teach class. And it was a hot one out and the kids were enjoying it even less than I was, but we made it through. After that I really wanted to get in a good workout at PF. I started with 45 minutes on the stepper doing a hill program. Then I went and did about 15-20 minutes of upperbody weights and finished with 20 minutes on the treadmill with speed intervals. And I finished with some abs as always. For lunch I sautéed a bunch of veggies together. I believe I had some broccoli, peppers, mushrooms, onions and tomatoes, and I put them on a plate with baby spinach on top of the veggies. I then made an egg and put the egg on top of the spinach and top with a little asiago three cheese blend. This meal was great because the runny yolk served essentially as the dressing for the salad. It was tasty and filling. There were so many flavors and textures too which completed the dish. I also had it was a glass of almond milk, my new favorite drink, and a cup of fruit which had watermelon, blueberries and raspberries. I ended up saving those for an hour later because I was so full. The veggies underneath are hiding. Trust me there are a bunch under there. Anyone else into almond milk?!
While enjoying my lunch and waiting for Nicole to come over for more stats I watched the Olympic trials. I saw Michael Phelps win a race. His major competition Ryan Lochte I believe his name is, is quite the looker!! I'm glad he made it in the team! I finished the night with my girls watching Hercules, the cartoon yes. We are not ashamed to admit our sometimes childish qualities, instead we embrace them! Most of us had never even seen the movie and it was actually really good. I'll gladly show my kids that one! Now you are probably reminiscing about your favorite Disney movie...care to share?! Tomorrow it is trip number two of the week for me! This one is solo and to New Jersey where I am going to visit my roommate for this coming year, Erica! I am so excited I hope I can get some sleep. And on that note...night all :) As I am sitting here watching Chopped I realized I didn't post what I made for dinner tonight, which was ironically the title of my post! I made fish tacos! I started by sautéing the onions and adding minced fresh garlic. Then I added the tilapia. Once it started to cook through I added tomatoes, like juice and cilantro. I broke up the tilapia once everything was added. My parents loved it and even one of my brothers, who isnt a big fish fan, liked it! I garnished it with a slice of avocado and a dash of grated Parmesan cheese. I'm definitely excited for some leftovers tomorrow!! We did almost have a mishap with the tortillas...we bought corn gluten free tortillas. I didn't realize until today how grateful I am that I can eat gluten. Thank goodness we had some extra at home.
I just had to share my fish tacos with you! Goodnight for real this time! Errands, errands, errands! That was what my morning consisted of. Oh and a couple hours of stats homework. It's Tuesday so the last errand of the day was grocery shopping! I found a couple of dessert recipes for the Fourth of July before we went so I got what I needed and made my first dessert tonight...white chocolate covered Oreos with festive sprinkles! I had a limited supply of lollipop sticks so some are without a stick. They are so cute and festive! I want to try and make cake pops too sometime soon. After the last few days I think I'll be taking a break from sweets for a while.
This afternoon I went to the pool with Nicole. Swimming is not my forte and neither is it Nicole's. She did some of my workout with me which was fun! This workout was a long one though and she was going running later so I don't blame her for not going the whole workout with me, but I enjoyed her company! This is the workout I did today: 1 x 400 6 x 50 6 x 100 8 x 50 1 x 300 Total: 2000 yards That was killer. I was exhausted after. I left the pooling feeling accomplished though! I finished the night watching one of my current favorite shows, The Glee Project! I don't think I have yet expressed my obsession but GLEE is my obsession! Just wait for season four to start! I can't wait! Anyways, my favorites on the Glee Project would have to be Blake, he's so cute, Shana, great voice, Michael, he's just so normal, and Aylin, she's got attitude in a good way! First success was arriving to her house without making one wrong turn. I know I used a GPS but I was still proud of myself. I tend to be directionally challenged. When Emily and I arrived at Steph's we were greeted my our excited friend and her welcoming parents. Her mom and dad were really awesome. We got the chance to sit and talk with them for awhile and they were great! Her mom prepared a brunch for us travelers. It was very good! I even had my first encounter with Monkey Bread and my goodness was it good!! She also made an awesome egg casserole and a yummy strawberry yogurt dip for fruit! I personally love to bring baked good when I go to someones house, especially for the first time, so I brought S'mores Bars. It was a good choice too because it turns out her family loves this treat! Also, her mom made this amazing chex mix, which I am eating currently as I write this because I was lucky enough to take some home! Yummy! After brunch and hanging out and her house for awhile, we got the tour of Montoursville. Pictures will not justify the beautifulness of the area. It is surrounded by mountains and the Susquehanna. It's gorgeous. After part one of the tour we went down by the river. Yes I really took this picture!! Stephanie is on the left and Emily on the right. I told them they HAD to make my blog!! The three of us, thoroughly enjoying each others company by the riverside! Next was round two of the tour. We got to see downtown Williamsport and more of the beautiful views. Then is was back home for some pizza for dinner and hanging out for a little bit longer until it was time to leave :( Emily and I did not want to leave, but we were happy to see Stephanie and be together again! It didn't even feel like two months had passed since we last saw each other! I am truly so lucky to have such great friends both at home and at school!! Today was such a bore compared to yesterday. I woke up and made a breakfast wrap of spinach mixed with garlic, topped with tomatoes and cut up light babybel cheese and scrambled egg whites. It was very good, juicy, but still good. After so errands, one including going to get my tri-bike tuned up, I got my workout in. I went to a local church that has a lot of land and has a trial that goes around its whole property. The trail ends up being two miles and has many different hills and turns. It is definitely more exciting then running around the flat track. I did two laps totaling four miles then went home to do that Pinterest 1000 calorie workout I posted the other day. I finished just in time to settle in for some of the Olympic trials, Dara Torres' first run and A Walk to Remember. What a great movie! I finished the night at the older of my younger brothers, Ben's, baseball game. They won! It was a long game though. For dinner I made a salad that had cucumbers, carrots, avocado, tomatoes, green peppers, cheddar cheese and was topped with a chopped up vegetarian chicken patty. It was quite filling and tasty! I wish I hadn't put as much cheese on, but now I know. Now it's hometowns on the The Bachelorette! Have a great week everyone! And whoever is traveling safe travels and have a wonderful trip!!
