These past two days have been pretty crazy! I just could not find time yesterday to blog between going to work, taking a test, working out and throwing a surprise going away party for my best friend! My best friend is leaving tomorrow for France, for a whole month! I am so excited for her. She is going to help with an international church and it's summer programs. All of our closest girlfriends came over to my house for what she thought was one of our famous glee and gilmore girl marathon nights. Little did she know, we'd been scheming! Here are the cupcakes my friend Nicole and I made for Ellen. Aren't they clever?! It was so nice to get everyone together one last time before she jets off. And thankfully I got to spend a little more time with her tonight, before she leaves tomorrow.
My workouts the past two days were pretty good ones I think! Yesterday I went to my town's local college's track with my friend Nicole. She is one of my many motivators, even if she doesn't know it. She plays field hockey and is on the track team at her school, and she is in AMAZING shape. I started with a mile run, then went on to 10 100 meter exercises, varying from buttkicks, skips, sprints and high knees. Then I finished with another 2 miles and a couple little side exercises.
Today's workout I went to PF and did 35 minutes on the stepper on the hill setting. Then in this month's issue of Health, they have a great circuit workout that constitutes nine exercises 5 involving handweights, 3 "cardio blasts" and one with an exercise ball. They were each 1 minute workouts and I did two full circuits. And let me tell you, I was sweating and feeling the burn. The workout suggested three full circuits, but I think if they were the workout by itself.
One of the things I love about being home is having full control over what I eat, for the most part. My mom loves having me home since I have been helping with the cooking. I cook a meal or two a week! I really enjoy trying out new recipes and my mom enjoys not having to cook! Tuesdays is usually when my mom goes shopping and every time I go with her she always jokes about how her bill is so much more expensive when I got with her cause of all the healthy stuff I throw in the basket, but she continues to ask me to come each week. Doesn't seem like she minds too much, now does it?! Your health is an investment. I do believe you should spend the money on quality food.
Tonight before spending the last night with my best friend, I made dinner! What was on the menu you ask?! Salmon! Yummmmmy! I put the salmon in a dish with lemon juice, capper and scallions, and attempted artichoke hearts...have you ever tried to make artichoke hearts? I tried today, not easy. I put it in the oven at 350 for 25 minutes. I served with herbed couscous with pine nuts and sauteed mushrooms and onions. I thought this meal was quite a success, especially with my first time cooking salmon. My parents were pretty please with it as well. My dad however is not the biggest fan of couscous, but he still cleaned his plate off!
