Fall is known for the changing leaves, changing wardrobe and even changing food selections! One of my most favorite, as I am sure many of you share this with me, is pumpkin! Pumpkin just screams fall. Oddly enough I wasn't a big fan of pumpkin until the last three or so years. My farthest memory of pumpkin goes back to the pumpkin roll my mom makes every year for Thanksgiving. I am starting to drool just thinking about it! Being at school it is sometimes hard to participate in the pumpkin fun, but I try my best, like an occasional Pumpkin Latte from Starbucks. I had one last night at a cute coffee shop in town called Fenarrio's, and it was great! I am not a huge coffee person but I can't resist the pumpkin!
Last weekend I went home for a long weekend. My anatomy lecture was cancelled so I went home for Friday, Saturday AND Sunday! Friday for lunch I tackled Julie's Honey Whole Wheat Pancakes. They were amazing! Not only that but healthy too! My dad even enjoyed the leftover batter the next morning for breakfast. They were an A+ in my book!

Friday night one of my roommates, Christine, and I were hanging out with nothing too do. I was craving another pumpkin fix and wanted to do some baking, but nothing too extravagant or unhealthy. I decided on a super simple pumpkin muffin! The hardest part of this recipe is putting the batter into the muffin tins. It's a littler strenuous I know...Anyways the recipe looked like this...
...a box of Betty Crocker Spice cake mix and a can of Pumpkin. You mix it all together and bake it at 350 for about 20 or so minutes. I yielded 15 muffins and they are each only about 44 calories! Hello yummy breakfast!
Cooking in a dorm kitchen is hard because you have to bring all the ingredients and pray they have all the cooking utensils you need. In my case all I needed was a mixing bowl and muffin tins which they had!
Christine opted for another 2 ingredient yummy, which used sugar cookie dough to wrap around Rollo's. All she needed was a cookie sheet and they turned out super delicious as well! We had a fun night too just hanging out and baking!
