She is alive!!! I know I haven't been able to blog for a while! It has been upsetting that I haven't had time to sit down and blog but I finally have time today and I might even write two posts! But first I will give you the highlights of my food in basically the last three to four weeks...we've got a lot of catching up to do!
A couple weekends ago I was able to go home for fall break and I was excited to get my hands dirty in the kitchen!
I finally made a dinner that got a two thumbs up from the WHOLE family! What was it you ask? A tomato tortellini soup, with a side of garlic bread.

Sunday's my family is always known for having a family dinner and a dessert usually accompanies it. The soup was for dinner and a pumpkin spice cake was on the docket for dessert!
The middle had a walnut glaze and I ended up just using regular icing and topped it with the recipe's icing it called for! It was yummy!
I made cookie dough for cookie dough cupcakes! I took these frozen cookie dough balls and baked them into the cupcakes. These were for Emma, one of my roommate's birthday! She loved them, the suite loved them and my brothers loved them! I am so mad I forgot to snap a picture of the end result!

The last day of fall break I was home all by myself baking and cooking up a storm. I made some yummy, healthy, pumpkin muffins to bring back to school to have for breakfast! I can't wait to be able to actually do this at school!
And of course I had to make my famous granola bars! My roomie loves them! I also made dinner for the family. I made a white cheddar mac and cheese that was baked in the oven and topped with bread crumbs. It was a big hit! The only thing was it called for a 1/4 cup of white whine...I think it was probably too much.
For lunch that day I made myself a burrito with brown rice, tomatoes, lettuce, black beans and guacamole, and put it in the panini maker.
I forgot to mention the weekend before I came home I went to visit my bestfriend Ellen. I had a great time seeing her school and her of course, and we finished off the night at her local diner. I was pleasantly surprised to have one of the best vegetable quesedillas I ever had!
Also, my mom and grandma came up to visit me! I love getting visitors especially when its my mom and grandma! We had a a nice visit, and we went to Nonna's an Italian Restaurant in town West Chester. I had never been there before and I had never been to a restaurant that had a specific lunch menu and dinner menu. The pickings were a little slim for a vegetarian, but I got a very delicious vegetable wrap. My Grandma got some beautifully looking and tasting bruschetta as an appetizer.
Did I mention I found a whole clove of garlic in my wrap!! Good thing I noticed before I bit into it. I would've been tasting garlic for days!
The weekend after fall break was Christine's birthday, another one of my sweet mates! Three of us went and made her the cutest cupcakes I've ever made! She loved them!
On her birthday we all got dressed up and went out to Iron Hill Brewery! It was such a fun night to have the whole suite together and just go out together. I would love to do it more often to try all the different restaurants here in West Chester. I enjoyed a decadent crab sandwich, with massive sweet potato fries and coleslaw. I am not a huge fan of coleslaw, but I always try it when I go to a restaurant. I actually really liked it, same thing with tartar sauce, there's was different and I am a fan!
The last one I will share...Panera! I went out with a couple of my friends the other night to Panera and I got a bread bowl! Oh my I know how bad it is for you, but I hadn't had one in years. I got French Onion soup in it and it was deeeelish! I could just sit and each their bread by the baguette. Nothing better!
